Today is the last day of July and I can’t even believe it! Some cooler temps have moved into Michigan recently, which reminds me of fall. I absolutely LOVE fall, however one more month of summer temperatures is definitely ideal because once it starts getting colder, it is a looooooong eight months of winter up here!!
I apologize for missing WIAW last week, but like I mentioned on Monday, last week was a big ol’ blur. Although it is the last day of July, it is also Wednesday, meaning another edition of What I Ate Wednesday Tuesday is coming your way in 3,2,1….
5:30am Pre-workout Fuel: Banana
Sorry, no pic…kinda boring, yet still so perfect before an early workout.
8am Breakfast: Van’s Power Grain Waffles Bagel Sandwich from Barry’s
I had it all planned out to pack my waffles with the delicious toppings, but in my early morning, sleep-walking, daze out the door to boxing, I forgot it all! Mornings-1 Kelly -0
10am Snack
Strawberries! Technically, their season is coming to an end, but I’m hoping to make a few more perfect purchases before the summer is over!
1pm Lunch
Salad bar option at a local market called Produce Station. This place is seriously Bah-nanas, Rachel Zoe style…I die!!
They have the best pre-packaged salads, pastas, sandwiches, full-out prepared meals that you just bake, produce (obviously), and a grill in the summer cooking up the most tasty lunches!! Can’t get enough!
3pm Snack
Courtesy of my trip to the Produce Station (see above) I picked up some chocolate covered espresso beans and they’re pretty much to die for. I ended up running around my office sharing the love and let’s just say that people were NOT disappointed. Even the apprehensive ones, which I’m not sure why they were in the first place, but they were forgiven. 😉
6:30pm Dinner
Alright, I’m so excited to share this with you! It’s so fresh tasting with all of the healthy veggies and cilantro, add a bit of kick with the jalepeños and spices and you’re on your way to a summer infused fiesta in your mouth!
Avocado & Tomato Salad
- 2 Avocados
- 1 Roma Tomato
- 2-3oz. Red Onion
- 1/2tbsp. Jalepeños (Finely Chopped)
- 1/2 Juice of a Lime
- Cilantro
- Garlic Salt
- Cumin
- Cayenne Red Pepper
- Chili Powder
Directions:
- Cut avocados in half, slice the insides into sections and scoop out with spoon.
- Cut tomato into chunks.
- Chop onion.
- Finely chop jalepeños or purchase them diced/finely chopped.
- Combine into a bowl.
- Add the juice of a 1/2 of a lime.
- Add cilantro, garlic salt, cumin, cayenne red pepper, and chili powder all to taste. (I like the extra spice, myself. 😀 )

I’ve been lucky this summer with my produce purchases…but that’s in huge part to going to the markets and not relying on the chain stores!
