Happy Marvelous Monday to everyone out there!

My blogs have been scarce (not marvelous), but I have been knee deep in my online graduate class! It’s very time consuming and I’m already in week three! WOW! The class is going well and I am enjoying the format of posting a discussion board post each week and having to comment on at least two other discussion posts. There is a test each week on the reading, and that has been the most tedious part of it all. Five more weeks to go (that’s marvelous)!  🙂

Marvelous is…

Attending the Michigan night game this past Saturday and beating them! Whoop whoop, Go Blue!!

Marvelous is…

Receiving my very first Love, Yellow purchase through Erin at Living In Yellow. If you haven’t seen her blog, yet, make sure to stop over. She’s freaking hilarious, I basically die laughing during all of her posts. And, of course, she has great fashion sense! This cardigan goes with just about anything, and is soooo comfy! Just in time for those fall-like temps, even though it is going to be over 90 degrees here the next two days! The “Love: necklace is perfect and dainty and so is the ring! Unfortunately, it didn’t fit, so I turned it into a necklace to wear with the “Love” necklace. Ya, I’m creative like that. 😉

Marvelous is…

I am on Day 8 of the 24 Day Challenge with Advocare and feeling MARVELOUS! It has been awesome, so far! I am loving how the composition of my body is changing already and I am still only in the Cleanse Phase.

Overall, this really helps kick start your journey, whether it’s overall health and wellness, weight loss, etc. For me, I used it to get back on track with eating healthy and tracking/logging my food. I am the type of person that if I don’t Iog all of the calories I eat I will think that a burger is only 100 calories. I am in no way saying that logging is for everyone, but it works for me. Find what works for you and try different things to do so, it takes A LOT of time and trial and error before you find what works best for your body, lifestyle, and schedule!

Belated Concert Post #MIMM

Happy Labor Day and Happy Marvelous in My Monday!

I hope all of you had the chance to enjoy the day off, but still not forget what this day is about. 🙂

I still owe a weekend re-cap from THREE weekends ago! It was a good one, so I definitely wanted to share, however out of date it is now! 🙂

A little less than a year ago, my friend Jessica and I purchased tickets for her and her husband Cameron and me and Tim, to the Kenny Chesney concert for the weekend of August 17th at Ford Field in Detroit. The weekend finally arrived and it was awesome! We went last August when he came to Ford Field in Detroit and knew we just had to go again this year!

We arrived in Detroit around 12pm so that we could check into our hotel, freshen up, and head out to enjoy the atmosphere in Detroit, before the concert. There was also a Tigers game that night, so downtown was totally hoppin’, as you can imagine.

The views from our hotel room of the Detroit River and the Ambassador Bridge were gorgeous!

We headed over to Cheli’s Chili Bar, since they had outdoor seating.  We enjoyed the drinks, music, and people watching for a few hours before the show.

After Cheli’s we headed over to Elwood Bar for a change of scenery and to enjoy more drinks and people watching. (Jess and my favorite past time 😉 )

The concert was, of course, a blast! Kenny Chesney had Kasey Musgraves, Eli Young Band, and Eric Church open for him and they all rocked it!

Long Lost WIAW

I’m back for What I Ate Wednesday!! Whoop whoop! It has been far too long…

I figured since I’ve been MIA for so long, I would share some of my latest eats with everyone! 🙂

Tim and I love to go to a local breakfast place almost EVERY weekend, but he decided to try his hand at himself and made one of our favorite choices.  A Greek egg scramble/skillet complete with spinach, broccoli, mushrooms, and feta cheese. It’s all Greek to me (and freaking delicious)!!

With all of my early morning workouts, the banana started getting old and I decided to switch it up by trying a variety of different protein bars beyond my new-found love for Quest Bars.

The Larabar was good, but it wasn’t what I expected it to be texture and look-wise. It was good though and I will definitely purchase again!

O.M.G. Luna Bars…I am NOT kidding, you MUST try these immediately!! The Chocolate Dipped Coconut was a great hold me over snack/breakfast on the go this past weekend. The Cookie Dough was a great surprise, I really loved the mini chocolate chips!! And, my Carrot Cake with coffee combo had me craving for everything fall, pure joy!!

Long story (and photos) short, loving the protein bars and I must go buy more and try more flavors ASAP!

This bad boy was phenomenal! Tim and I finally tried The Wafel Shop in downtown Ann Arbor for dinner, recently, and I ordered the gluten-free waffle topped with Nutella, bananas, strawberries, and whipped cream…NAILED IT! We will be back.

Summer is quickly coming to a close, but I am still in full swing with one of my favorite go-to salads. Spinach, grape tomatoes, feta cheese crumbles, walnuts, and light balsamic. So. Simple. So. Delicious.

A nice strawberry, peach, plum, nectarine, blueberry fruit bowl. So refreshing!!

My obsession with Caprese Salads continues…can’t get enough of that mozzarella/basil/tomato combo.

MIMM & Get Movin’ Mini-Series #3

I am a failure as a blogger! Ugh…I just don’t even know how all of you amazing bloggers healthy living and others do it every day, or at least consistently! I feel like life catches up and next thing you know, it’s a week later and here I am feeling guilty. Boo.

Okay, enough self-wallowing for one day…It was a MARVELOUS Monday here in Ann Arbor, and I hope it was for you, too, wherever you are!

What’s NOT Marvelous?

My apartment has mice!! Eek! Seriously, if you ever want to feel like the filthiest and dirtiest human being just find a mouse running around your house. You’ll feel it, I promise.  Thanks to my awesome roomie, she caught two of them via mouse traps and the exterminator come tomorrow. Hopefully they’ll get any of the lingering fellas outta here!  I honestly should have known when my bananas kept having holes in them and droppings found on the counter, but I thought the holes were from fruit flies and the droppings were…well I wasn’t sure just yet. Talk about biggest blonde moment of the year! Winner, winner mice dinner! Moving on…

Let’s focus on the Marvelous…

I found a new-to-me store that I’ve been meaning to check out for a while now, but never got around to it. I finally entered Plum Market, this weekend, and found heaven. No joke. If you live in Michigan or Chicago, check this place out ASAP! It is like Whole Foods, but I found it a little less overwhelming and easier to navigate and find things. It’s just pure beauty and happiness for me. Any other Plum Market lovers out there?

While at Plum Market I picked up the Chobani bite Carmel with Pineapple Chunks Yogurt and…holy wow! Soooo freakin’ good guys, do yourselves, your family, and your friends a favor and go out and buy this ASAP for all to enjoy!  I actually used it to make some overnight oats, recipe coming soon! Did I leave you drooling and wanting more?? 😉

I stumbled across the new Netflix Show Orange is the new Black, this weekend…ummm, please tell me someone out there watches this?! I’m obsessed!! Such a great series, I hope they keep new episodes coming! Hop on the #oitnb train, you know you want to!

I also watched EatPrayLove for the first time this weekend, where have I been?! Such a great movie and made me want to travel right now!! I loved the two lines, “Maybe you’re a woman in search for her word,” and “To lose balance for love is part of living a balanced life.” Beautiful. Plus, I adore Julia Roberts, and love all of her movies! ❤

There I am, moseying into Bed, Bath, & Beyond for Keurig coffee when I spot the Clearance rack, outside.  I browse the shower curtains, the snow cone machine, and then I see it. A Kitchen Aid Stand Mixer. I think, those are typically $400+, I wonder how much this one is. I lean in closer to get a better look, and sure enough it is $199 due to…wait for it…a damaged box! You read that right, Just about $200 off because the box was a little banged up, which in my opinion wasn’t really, but who am I to argue, I got a Kitchen Aid Stand Mixer for 1/2 off!!  Add (or should I say subtract) to that the 20% coupon and you’re looking at the new owner of a perfectly working with all of its parts included Kitchen Aid Stand Mixer for only $160!! I’d say that was enough Marvelous for my whole entire year!

 I was so happy and proud! I absolutely NEVER find good deals on anything, but then this purchase comes along and either changed my luck or makes up for my terrible bargain hunting abilities.  As we drove out of the parking lot with my new purchase, I was cheering for myself (out loud) and Tim couldn’t even believe how and why I was just so excited…he’ll learn. 😉

You know what else is Marvelous? Getting to visit my friend, Kari, and meeting her two week old baby girl, Carson.

WIAW Goodbye July

Today is the last day of July and I can’t even believe it! Some cooler temps have moved into Michigan recently, which reminds me of fall. I absolutely LOVE fall, however one more month of summer temperatures is definitely ideal because once it starts getting colder, it is a looooooong eight months of winter up here!!

I apologize for missing WIAW last week, but like I mentioned on Monday, last week was a big ol’ blur.  Although it is the last day of July, it is also Wednesday, meaning another edition of What I Ate Wednesday Tuesday is coming your way in 3,2,1….

5:30am Pre-workout Fuel: Banana

8am Breakfast: Van’s Power Grain Waffles Bagel Sandwich from Barry’s

I had it all planned out to pack my waffles with the delicious toppings, but in my early morning, sleep-walking, daze out the door to boxing, I forgot it all! Mornings-1 Kelly -0

Strawberries! Technically, their season is coming to an end, but I’m hoping to make a few more perfect purchases before the summer is over!

Salad bar option at a local market called Produce Station. This place is seriously Bah-nanas, Rachel Zoe style…I die!!

They have the best pre-packaged salads, pastas, sandwiches, full-out prepared meals that you just bake, produce (obviously), and a grill in the summer cooking up the most tasty lunches!! Can’t get enough!

3pm Snack

Courtesy of my trip to the Produce Station (see above) I picked up some chocolate covered espresso beans and they’re pretty much to die for. I ended up running around my office sharing the love and let’s just say that people were NOT disappointed. Even the apprehensive ones, which I’m not sure why they were in the first place, but they were forgiven. 😉

6:30pm Dinner

Alright, I’m so excited to share this with you! It’s so fresh tasting with all of the healthy veggies and cilantro, add a bit of kick with the jalepeños and spices and you’re on your way to a summer infused fiesta in your mouth!

Avocado & Tomato Salad

Ingredients:

  • 2 Avocados
  • 1 Roma Tomato
  • 2-3oz. Red Onion
  • 1/2tbsp. Jalepeños (Finely Chopped)
  • 1/2 Juice of a Lime
  • Cilantro
  • Garlic Salt
  • Cumin
  • Cayenne Red Pepper
  • Chili Powder

Directions:

  1. Cut avocados in half, slice the insides into sections and scoop out with spoon. 
  2. Cut tomato into chunks.
  3. Chop onion.
  4. Finely chop jalepeños or purchase them diced/finely chopped.
  5. Combine into a bowl.
  6. Add the juice of a 1/2 of a lime.
  7. Add cilantro, garlic salt, cumin, cayenne red pepper, and chili powder all to taste. (I like the extra spice, myself. 😀 )
